How booking a mobile pizzeria works
What happens between your first message and the last slice
This page explains the whole run: how a quote gets built, what setup looks like when the rig arrives, how service works while guests are eating, and what we do when the evening ends. If you are comparing caterers or planning your first event with a mobile pizzeria, this is the process behind the quote — not a brochure version of it.
We cater weddings, corporate events, birthdays and private parties across Miami and South Florida. Every event runs on the same seven steps below. What changes is the venue, the guest count and the service window — and those are exactly the things we plan with you in advance.
Booking to breakdown · seven steps
The seven steps, in the order they actually happen
Send us your event details
The process starts with a conversation. Tell us your date, your venue, your guest count, and the type of event you are planning — a wedding, a company party, a birthday, a private dinner. The more detail you share, the more accurate your quote will be. If you already have a run of show or a venue contact, include that too. We use all of it to build a plan that fits your event rather than a generic estimate.
We build your quote
Once we have your details, we put together a quote based on guest count, service style, menu depth and service window. If something is unclear or if there are options worth considering, we will tell you. The quote reflects the event you are actually planning, including any add-ons like salads, small bites, or a build-your-own toppings station. There is no pressure to decide on the spot, and no obligation until you confirm your date.
Confirm your date
When you are ready to move forward, we confirm your date and lock in the details. Peak weekends in South Florida fill up months ahead, so confirming early gives you more flexibility on menu and station layout. Once your date is held, we move into planning mode and coordinate any logistics your venue requires.
Planning and coordination
Before the event, we coordinate with you and your venue on load-in times, setup space and service windows. If your venue has a preferred vendor process or specific access rules, we work within them. This is also when we finalize the menu and confirm any dietary needs. The planning stage is where most of the work happens, so event day runs smoothly and nothing is decided at the last minute.
Setup on event day
We arrive early enough to set up the oven, the prep line, the toppings bar and the service area. Setup includes firing the oven and getting the station ready before your first guest reaches the food. Depending on the venue, load-in may take more or less time, which is why we plan it in advance. By the time your event starts, the station is ready to serve and the first pies are already in the oven.
Service during your event
During the service window, our staff work the station and bake pies to order. Guests move through at their own pace, whether the format is chef-attended, buffet-style or festival-style. We keep the line moving and the toppings stocked so guests are not waiting. If your event has a second service window, we time it around your program — speeches, cake, first dance, whatever the evening runs on.
Breakdown and departure
When the service window closes, we break down the station and take everything with us. You are not left with trays, warming pans or cleanup. Breakdown is part of the service, not an extra step you have to manage. By the time your event ends, the station is packed and gone.
On-site setup, in plain detail
The rig arrives with everything it needs: the oven, the prep line, the toppings bar and the service station. Load-in is the slowest part of the day, which is why we plan the access route with your venue well before the event date. Tight elevators, gated courtyards and long service corridors all change how early we need to arrive — tell us about them at the quote stage and we build the schedule around them.
Once the station is standing, the oven gets fired. It takes time to come up to temperature and hold it, so the fire is lit before guests arrive, not during dinner. The toppings bar is set, the dough is proofed and the first pies are shaped. By the time your event starts, the station is ready to serve.
Exact load-in times, footprint and access requirements are agreed with your venue during planning — not guessed on the day.
How service can run at your event
The service window is the part of the evening your guests actually remember. Pick the format that fits the room — we will tell you which one suits your venue and headcount when we build the quote.
Swipe the table sideways on a phone. Formats can be combined in one event — most weddings run chef-attended first and festival-style later.
What can shift the timeline
A few things can move the plan, and none of them are surprises if we talk about them early. Tell us what you know about your venue and your guest list at the quote stage — that is where the schedule gets built.
- Venue access Tight elevators, gated courtyards, service corridors or a fixed delivery window all change how early the rig needs to arrive. Share the venue contact and we handle the coordination.
- Load-in window Some venues only allow setup in a short slot before the event. We plan the oven fire and the prep line around that slot so service still starts on time.
- Guest count A final count that moves changes dough, toppings and service time. Tell us as soon as the number settles and we adjust the plan rather than the price after the fact.
- Weather Outdoor events in South Florida get rain. We plan a covered or indoor fallback position for the station and tell you in advance if the forecast needs a change.
Questions before you send your date
How far in advance should I book?
For weddings and large corporate events, several months ahead is common, especially on peak weekends. Smaller private parties can sometimes be arranged with less notice. Contact us with your date and we will confirm availability.
What happens after I request a quote?
We review your event details, put together a quote based on guest count, service style and menu, and follow up with availability and options. There is no obligation until you confirm your date.
Can you coordinate with my venue?
Yes. We work with venue coordinators on load-in times, setup space and service windows. If your venue has a preferred vendor process, we work within it. If they need paperwork or insurance details before the event, tell us at the quote stage and we will handle it with them.
What do you need from me on the day?
Very little. Someone to open the access route, a confirmed spot for the station and a rough idea of when your guests will be ready to eat. Everything else — oven, prep, toppings bar, serving and cleanup — is ours to handle.
Can you handle dietary needs and add-ons?
Yes. Dietary needs are confirmed during planning, not on the night. Salads, small bites and a build-your-own toppings station are available as add-ons — mention them when you send your event details and they will be reflected in the quote.
If your date is not fixed yet, or you are comparing a few caterers, send us what you have. We will tell you honestly whether we can fit your event and what the next step looks like.
