About Papa Gino's Mobile Pizzeria in Miami
Papa Gino's is a Miami-based mobile pizzeria built around a wood-fired oven and a simple idea: fresh pizza, made on site, served while it is still hot. We cook at weddings, corporate events, birthdays, and private parties across South Florida.
How We Started
The mobile pizzeria grew out of a straightforward frustration: event food is often the least memorable part of a well-planned event. Catering trays go cold, buffets get repetitive, and the food becomes an afterthought.
We wanted to bring the opposite experience, where the food is made in front of guests and served the moment it comes out of the oven. That idea became the station we run today — a rig small enough to fit a backyard and fast enough to keep up with a crowd.
What the station does
- Dough stretched by hand and baked to order during your event.
- The oven, the peel, and the toppings bar arrive with us and pack down the same night.
- Guests watch their pie go in and get it hot when it comes out.
Our Approach to Pizza
We keep the process simple and do the basics well. Dough is made ahead and stretched by hand on site. Pies are baked in a wood-fired oven that reaches high heat, which gives the crust its blistered edge and tender center.
We bake to order during your event, so nothing sits under a heat lamp. The menu covers classics and specialty pies, and the toppings bar lets guests build their own slice at their own pace.
Why Wood-Fired, and What It Changes at Your Event
The oven is not a gimmick. Wood-fired heat surrounds each pie, which is why the crust crisps quickly without drying out and why a pie bakes in about ninety seconds. That speed matters at events because it keeps the line moving and the food hot. Here is what that looks like on the ground.
The oven also draws guests in. People tend to gather near it to watch, and that pull is part of what makes the station work. If you want the menu in front of you before you book, the full list of pies and toppings lives on its own page.
On the oven tonight
A chef works the oven, not a line cook working a tray warmer.
Our Team
The people working the station are the reason the service runs. A chef works the oven, attendants manage the toppings bar and the line, and someone keeps the station stocked so nothing stalls. Consistency across a hundred pies is a skill, and it is the part of the job we take most seriously. The oven matters, but so does the person working it.
Oven
Chef
Reads the deck, turns each pie at the right moment, and pulls it before the crust tips past blistered into burnt. One person stays on the oven for the whole service window.
Bar & line
Attendants
Keep the toppings bar tidy, refill the cheese and basil, and call the next guests through without letting the line bunch up at the hatch.
Stocks
Runner
Moves dough, sauce and cheese from the truck to the counter so the chef never has to leave the oven to fetch anything mid-service.
Where We Cook
We are based in Miami and serve events across South Florida, including Miami-Dade, Broward, and parts of Palm Beach County. We have set up at private homes, waterfront venues, parks, and corporate campuses. Distance affects travel time and setup logistics, so we factor your venue location into the plan. If your event is outside our usual range, ask anyway.
What We Care About
Three things matter to us, and they set the questions we ask before we ever park the truck.
The food
Worth eating
Fresh dough made ahead, stretched by hand on site, and baked in front of your guests. If a pie cannot be served hot, we would rather pull the next one than send that one out.
The timing
On schedule
We plan the service window around your run of show — toasts, first dances, speeches — so the oven is hot and the line is moving when you want it, not whenever we happen to be ready.
The experience
Part of it
The station should feel like a part of your event, not an interruption to it. Guests wander over, watch a pie go in, and wander back with something hot in their hand. When those three line up, guests remember the food.
Working With Us
We work with couples, event planners, corporate organizers, and hosts planning private celebrations. If you are comparing caterers, ask us the same questions you ask everyone else — we would rather answer them up front than have you find out on event day.
How is the dough made?
How does the line keep moving?
What happens if the guest count changes?
Do you work outside Miami?
Plan around your event
Weddings, corporate events, birthdays, and private parties — the station adapts to the venue and the run of show, and the menu stays the same.
Bring the oven to your event
Tell us your date, your venue, and roughly how many guests you expect. We will come back with what the station needs to fit the space, how the service window runs against your schedule, and which packages line up with the size of your event. If you already know the occasion, the packages page shows what each setup includes.
